Vinification takes place in temperature-controlled concrete vats, with alcoholic fermentation and maceration lasting 25 to 30 days, including gentle pump-overs and rack-and-return. A portion of the vinification is carried out directly in new barrels, and malolactic fermentation also takes place in oak barrels, with manual punch-downs and pump-overs. Ageing lasts 12 months in new oak barrels.
