Identity

Château Rabaud-Promis is a winegrowing estate located in the commune of Bommes, in Gironde. It was classified as a Premier Grand Cru Classé in 1855 and is part of the Sauternais wine sub-region. Thomas Déjean is the owner and manager, and Sèverine Déjean serves as cellar master. Consulting oenologist Henri Boyer also advises the estate. In 2019, Jean Merlaut acquired a stake in the property.

History and Philosophy

Château Rabaud-Promis was established in 1660. The property was acquired in 1950 by the Déjean family, who managed it across four generations. In 2019, wine merchant Jean Merlaut became a shareholder in the estate. The estate has been certified organic since 2023. Viticultural practices focus on promoting biodiversity and maintaining a living ecosystem throughout the vineyard.

Château Rabaud-Promis produces wines under the Sauternes appellation.

Winemaking and Ageing

Harvesting is manual, conducted in successive selective pickings, with grape sorting on sorting tables. Pressing is carried out with pneumatic presses. Fermentation takes place by batch in temperature-controlled stainless steel vats, with select batches fermenting directly in oak barrels. Ageing takes place in barrels for 12 to 18 months in an air-conditioned cellar. Bottling takes place two years after the harvest.

The Vineyard (Terroir)

The estate covers a total area of 40 hectares, with 33 hectares planted with vines. The cultivated surface area comprises 30 hectares. The vines have an average age of 40 years. The subsoil is sandy-clay, covered by a layer of Pyrenean gravel. The vineyard is nestled in the heart of the Ciron Valley and overlooks the Garonne. The estate propagates its own vines through grafting and has installed an anti-hail cannon to protect the vineyard.

Flagship Cuvées

The estate's main cuvée is Château Rabaud-Promis. Another notable cuvée is “Les Larmes de Rabaud”. Harvesting is carried out by hand through successive selective pickings (tries). Grape sorting takes place on a sorting table. Pressing is performed using pneumatic presses. Fermentation is conducted by batch in temperature-controlled stainless steel vats, with certain lots fermenting directly in oak barrels. Ageing lasts between 12 and 18 months in barrels within an air-conditioned cellar. Bottling takes place two years after harvest.
