Terroir

The Cérons appellation is situated on the Left Bank of the Garonne, in the heart of the Graves region. Its terroir is characterised by gravelly and clay-limestone soils, conducive to moisture retention and grape ripening. The proximity of the Ciron and Garonne rivers fosters a distinctive microclimate, with morning mists that are essential for the development of noble rot.

The wines

Cérons wines are sweet white wines crafted from the Sémillon, Sauvignon Blanc and Muscadelle grape varieties. Noble rot, or Botrytis cinerea, is highly sought after as it concentrates sugars and aromas within the berries. These wines are distinguished by their balance of sweetness and aromatic freshness, offering a palette of fruity and floral notes that evolve with ageing.

Food pairing

Cérons wines lend themselves to a wide range of culinary pairings. They are traditionally served with foie gras, whether pan-seared or mi-cuit, as well as blue cheeses such as Roquefort. Their freshness and aromatic complexity also allow them to pair beautifully with fruit-based desserts or delicate pastries, without overpowering the subtlety of the dishes.
