The terroir

Situated on the right bank of the Garonne in the Entre-deux-Mers region, the Sainte-Croix-du-Mont appellation benefits from a microclimate ideally suited to the development of noble rot. The vineyards are planted on steep hillsides of clay-limestone soils and fossilised oyster shell limestone. This geographical and geological setting imparts a distinctive minerality and aromatic complexity to the wines. The prime exposure of the plots encourages optimal grape ripeness, essential for crafting sweet wines.

The wines

Sainte-Croix-du-Mont is dedicated exclusively to the production of sweet white wines. The primary permitted grape varieties are Sémillon, Sauvignon, and Muscadelle. Harvesting through successive selective pickings (tries) following the onset of noble rot (Botrytis cinerea) yields grapes with highly concentrated sugars. These wines are distinguished by their golden hue, an expressive nose of candied fruits, honey, and flowers, and an unctuous palate balanced by delightful freshness, offering remarkable aromatic length.

Food pairings

Sainte-Croix-du-Mont wines are traditionally enjoyed as an aperitif, where their sweetness and complexity awaken the palate. They make a harmonious match for foie gras, whether pan-seared or served as a terrine. Their aromatic profile also pairs wonderfully with blue cheeses such as Roquefort or Bleu d'Auvergne, creating a delectable contrast. To round off a meal, they elevate desserts featuring stone fruit, walnuts, or almonds, and can even be savoured on their own as a digestif.
