Harvesting is carried out by hand, with the grapes passed through a destemmer and a sorting table. Gravity-fed vatting is used for whole berries in small-capacity tanks. Fermentations are temperature-controlled and last around 20 days. For ageing, the wines are transferred into oak barrels, one-third of which are renewed each year, for a period of 12 to 18 months depending on the vintage. Bottling takes place approximately 18 to 20 months after harvest.
