History and philosophy
The history of Château Canon began in 1760 with the acquisition of the land by Jacques Kanon, after whom the estate is named. After passing into the hands of Raymond Fontémoing, the property was acquired by the Fournier family in 1919 before being purchased by Maison Chanel in 1996.

The vineyard (terroir)

It is characterised by soils consisting mainly of Asteria limestone, marked by fossil shells and interspersed with clay fissures. This type of terroir encourages a slow, uniform ripening of the grapes. The grape varieties planted are predominantly Merlot (62%) and Cabernet Franc (38%). The average age of the vines is 35 years. Harvesting is carried out by hand.
Flagship cuvées
The grand vin, Château Canon, is a red wine renowned for its finesse, its opulent fruit in tension with mineral freshness, and its remarkable ageing potential. The second wine, Croix Canon, is sourced from parcels on the western slope of the plateau. It is distinguished by a fleshy, dense profile with notes of fresh red and black fruits and spices, delivering freshness and tension on the finish.
Vinification and ageing
Vinification is carried out traditionally in double-walled, truncated cone-shaped vats. Ageing takes place in oak barrels, punctuated by traditional barrel-to-barrel racking using an esquive.
