Vinification and ageing
Vinification at Château Cravignac is carried out on a parcel-by-parcel basis, with each plot vinified separately. The hand-harvested grapes undergo densimetric bath sorting. Fermentations take place in concrete vats, using extraction methods such as punching down and pump-overs. Following malolactic fermentation, ageing is carried out in new barrels, foudres, and amphorae for a period of 14 to 16 months.
