The history of Château de Callac dates back to 1773, the year the property was founded and its main house built. Originally, the site was a farm that produced both cereals and wine. In 1997, the château began producing a kosher wine cuvée.
In 2008, Matthieu Gufflet took over the management of the estate. In 2021, the exposed stone building underwent a complete renovation. The estate is certified High Environmental Value (HVE) Level 3, demonstrating its commitment to environmentally friendly viticulture.

The Vineyard (Terroir)
The vineyard of Château de Callac covers an area of 39 hectares. It is located on one of the highest points of the commune of Illats, notably on the Bel Air plateau, not far from Cérons and Barsac. The soils are characterised by classic graves overlying clay-limestone subsoils, typical of the appellation.
The grape varieties for the red wines are composed of Merlot (70%), Cabernet Sauvignon (20%) and Cabernet Franc (10%). The average age of the red vines is 15 years. For the white wines, the grape varieties are split between Sauvignon (50%) and Sémillon (50%), with an average vine age of 10 years. The area dedicated to red grape varieties is 30 hectares, and that dedicated to white grape varieties is 5 hectares. The harvesting of red grape varieties is carried out both mechanically and manually, while that of white grape varieties is exclusively manual.
Flagship Cuvées
Château de Callac offers several cuvées, including dry red and white wines. Among the AOC Graves wines, the Tradition and Prestige cuvées are featured. Wines from the Graves appellation are often described as fruity, highly aromatic, refined, and elegant. A kosher cuvée is also produced, characterised by aromas of black fruits, a beautiful structure, and savoury notes. The estate also produces the Grande Lande cuvée as a Vin de France.
Vinification and Ageing
