Château Romer du Hayot

Identity

Château Romer du Hayot is a winegrowing estate located in the commune of Fargues, in Gironde. It has been classified as a Deuxième Cru Classé of Sauternes since 1855 and belongs to Vignobles du Hayot. Winemaking is overseen by Tanguy Ledouble.

History and philosophy

The family's commitment to the wines of Sauternes dates back to 1851. Around 1800, Monsieur Journu owned Château Guiteronde du Hayot. In 1850, Charles Cocks already cited Château Guiteronde du Hayot among the finest white wine crus of Bordeaux. The estate's original cellars were subsequently affected by the construction of the Autoroute des Deux Mers.

The estate's parcels are situated in the Sauternais sub-region, producing wines under the Sauternes appellation.

The vineyard (terroir)

The vineyard of Château Guiteronde du Hayot spans 25 hectares in the heart of Haut-Barsac. The soils are predominantly clay-gravel and clay-limestone. The average age of the vines is around 40 years. The grape varieties consist of 90% Sémillon, 9% Sauvignon and 1% Muscadelle. Harvesting is carried out by hand, through successive selective pickings (tries successives).

Flagship cuvées

The estate's principal cuvée is Château Romer du Hayot, a Sauternes appellation wine. The estate also produces Château Guiteronde du Hayot, likewise under the Sauternes appellation. These wines are typically characterised by their aromatic complexity and balanced structure, distinctive of Sauternes sweet wines.

Vinification and ageing

Winemaking at the estate begins with gentle pressing in a pneumatic press, followed by fermentation in temperature-controlled stainless steel vats. The stages of mutage, settling (débourbage) and fining are then performed. For Château Guiteronde du Hayot, ageing takes place in stainless steel vats for two years. For the Château Romer du Hayot cuvée, ageing can be conducted in vats and barrels, with an overall ageing period generally ranging between one and two years.
