The vineyard (terroir)

Vinification and ageing
Harvesting is carried out by hand, followed by bunch-by-bunch sorting. The fermentation vats are temperature-controlled. A cold post-fermentation maceration takes place for 4 to 6 days. Malolactic fermentations occur in new barrels. Ageing lasts between 14 and 16 months on the lees using the Oxoline rotating barrel rack system. The estate's consultant oenologist is Michel Rolland.
