Château de Respide is a winegrowing estate located in the commune of Roaillan, in the Gironde department. The property is owned by the Chatin family, comprising Amélie, Pierre-Edouard, Gabriel, Alix and Joséphine Chatin.
History and philosophy
The history of Château de Respide dates back to 1630. Over the centuries, the estate has seen several owners, including Monsieur de la Reynie, Madame de Saint Aubin and the Rodies family. The wines of Château de Respide were praised as early as the 1850 edition of the Guide Féret. In 2021, the Chatin family took the reins of the property, heralding a new chapter in its story. The estate is firmly committed to environmental stewardship and holds the HVE (High Environmental Value) certification.

Winemaking and ageing
For the Le Drop Blanc cuvée, the vinification process includes pneumatic pressing of the grapes protected from oxygen. The settled musts ferment in stainless steel vats at controlled temperatures between 16 and 18°C. Ageing for this cuvée is short and carried out in stainless steel vats under an inert atmosphere.
