Vinification and ageing
Vinification takes place in vats—notably concrete tanks—as well as in barrels and stainless-steel tanks. Maceration lasts around three weeks, with pump-overs conducted twice daily. The ageing of the wines spans two years, divided between vats and barrels. Specifically, 90% of the ageing is carried out in vats and 10% in oak barrels.
