Vinification and ageing

Harvesting is carried out both by hand and mechanically. Initial on-board sorting is followed by selection on a vibrating sorting table to ensure only optimal grapes are chosen. Vinification takes place in temperature-controlled stainless steel and concrete vats. The wine is aged for approximately 12 months in a combination of vats and oak barrels.
