Vinification and ageing
Vinification at Château Joanin Bécot begins with parcel-by-parcel selection, followed by meticulous sorting of the grapes across three successive sorting tables. Cold pre-fermentation macerations are carried out. Fermentations take place in temperature-controlled 70 hl vats, designed with a wide shape to optimise extraction. Fermentations are managed with manual punch-downs (pigeage), followed by malolactic fermentation in oak barrels. A portion of the vinification is also carried out in stainless steel vats.
