Malolactic fermentation occurs in vats at 20°C. The cellar master closely monitors the evolution of the wines daily by taking barrel samples. Ageing takes place in oak barrels, where the wine matures for one year. Blind tastings are held several times a year to assess each cask.

L'explosion des croisières fluviales : à la découverte du ... - franceinfo
La saison des croisières fluviales œnotouristiques a repris à Bordeaux, avec l'arrivée d'AmaWaterways, marquant le début d'une compétition entre 7 croisiéristes sur ce marché en pleine croissance. Cette tendance génère des investissements significatifs à Bordeaux et à Bourg en Gironde, incluant de nouveaux pontons et un bar à vins, sans oublier l'ouverture imminente de la Cité du Vin. AmaWaterways, une compagnie américaine forte de 21 navires, mise sur Bordeaux comme nouvelle destination phare.
