Vinification and ageing
The wines are vinified at the estate, with meticulous attention paid to fermentation temperatures. Extraction is carried out through manual punching down (pigeage). The Château La Mondette cuvée is aged for 16 months in French oak barrels. Low levels of sulfites are used for the La Mondette 2022 vintage.
