The Vineyard (Terroir)

Viticultural practices include integrated pest management (lutte raisonnée), leaf thinning, green harvesting, plot selection, manual harvesting, and double sorting of the grapes.
Flagship Cuvées
Winemaking at Château Pomeys begins with harvesting at peak ripeness. A double sorting is carried out, first in the vineyard and then after destemming. Crushing is avoided. Pre-fermentation maceration is followed by pump-overs (remontages) and rack-and-return (délestages). Maceration is lengthy. The wines are aged in French oak barrels for 12 months. For this ageing process, the estate uses barrels from five different coopers, with a breakdown of one-third new oak, one-third one-wine oak, and one-third two-wine oak. A light filtration is carried out prior to bottling.
