Identity

Château Sauman is a winegrowing estate located in the commune of Villeneuve, in Gironde. The estate is currently owned by Adef Résidences, who acquired it in 2019. The wine estate is managed by Jérôme Donzeaud.

History and philosophy

The history of Château Sauman is steeped in a five-generation family heritage, with the vineyard having been founded towards the end of the 19th century by Louise Sinan. It remained a family-owned estate for around one hundred and fifty years before being acquired by Adef Résidences in 2019. Adef Résidences' philosophy centres on embedding the estate within a socially and environmentally responsible approach, notably through a commitment to short supply chains and catering for its residents. The château maintains a community-focused mission supporting adults with disabilities and the elderly.

The appellations

Château Sauman primarily produces wines under the Côtes de Bourg appellation. The estate also crafts a Bordeaux Rosé cuvée.

The vineyard (terroir)

Château Sauman's vineyard extends across 23 hectares, with an average vine age of around 35 years. It is situated in the north of the Côtes de Bourg appellation, approximately 30 km from Bordeaux and close to the estuary. The soils are predominantly clay-limestone, including those along the corniche de Gironde, contributing to a microclimate that shields the vines from spring frosts. The grape varieties planted for red wines include Merlot, Cabernet Sauvignon and Malbec. The estate practices traditional viticulture, including ploughing, grass cover between rows, and preventative vineyard care. Château Sauman is certified HVE3 (High Environmental Value level 3).

Flagship cuvées

Château Sauman offers several cuvées, spanning a range of red wines, a rosé, and a sparkling wine.

  • Cuvée Tradition: Crafted from Merlot and Cabernet Sauvignon. Historically, the blend has varied, predominantly featuring Merlot. It is a still red wine.
  • Cuvée La Pétillante: A sparkling wine made from Malbec and Merlot.
  • Cuvée Émotion: This cuvée is primarily made from Malbec.
  • Cuvée Secret de Sauman: Blended from Merlot and Malbec, this cuvée benefits from barrel ageing. The blend can be Malbec-led, offering a typically spicy aromatic profile and a fleshy structure, with an ageing potential of 12 to 15 years.
  • Cuvée Parcellaire: A wine made from Cabernet Sauvignon.

The estate's red wines often exhibit an oaky, spicy character, making them well-suited to festive meals. The estate also produces a rosé wine.

Vinification and ageing

Winemaking practices at Château Sauman are tailored to the ripeness and health of the grapes. They include mechanical sorting, total destemming, crushing, temperature control, and inoculated alcoholic fermentation, alongside micro-oxygenation. Ageing lasts between 12 and 18 months, predominantly in concrete vats, though specific cuvées such as Secret de Sauman undergo barrel ageing.
