The vineyard (terroir)
The Château Cajus vineyard covers an area of 15 hectares on clay-limestone soils. The estate follows organic viticultural practices, certified AB. Part of the harvest is carried out by hand, particularly on parcels with distinct slope and orientation profiles. The vines enjoy a south-facing exposure.
Flagship cuvées
The estate offers several cuvées. Among them, the “Cuvée des Anges” comes as a white, crafted predominantly from Sauvignon and Sémillon, and as a red, primarily made from Merlot. The “Cuvée Raphaëlle” is a Bordeaux clairet characterised by crisp red berry aromas such as redcurrant and raspberry, accompanied by a floral hint. Another notable cuvée is the Bordeaux “Rien à Ajouter”, a wine crafted without added sulphites. For the Bordeaux blanc, ageing takes place in stainless steel vats. The 2007 “Cuvée des Anges” blanc was aged for four months in oak casks, while the 2005 “Cuvée des Anges” rouge underwent twelve months of ageing in barrels. The ageing potential of Cuvée Raphaëlle is estimated at between 2 and 5 years.
Vinification and ageing
Vinification at Château Cajus takes place in a winery equipped with temperature-controlled stainless steel and concrete vats. Ageing is carried out in French oak barrels, one-third of which are renewed on average each year. The estate features three cellars, including one dedicated to bottle storage and ageing to ensure wines are released at optimal maturity.

Chateau Cajus vins bio de Bordeaux - Actualités
Le Château Cajus, producteur de vins bio de Bordeaux, partage plusieurs actualités concernant le vignoble et les vins. La nouaison a eu lieu, transformant la fleur fécondée en grain de raisin, et la véraison (changement de couleur des grains) est attendue en août, laissant présager des vendanges plus précoces que d'habitude en septembre. En parallèle, des courgettes sont cultivées pour des soupes. Le domaine met en avant son bordeaux clairet bio, qui affiche un taux d'alcool de 11,9% (12% vol.) et a obtenu une étoile au guide Hachette 2026. L'article aborde également les étapes hivernales de la viticulture, notamment la taille et le carassonnage, qui sont essentiels pour gérer la croissance de la vigne et optimiser la production et la qualité des raisins. Ces sarments sont ensuite broyés et réincorporés au sol comme engrais naturel.
