Château Chillac is a winegrowing estate located in Morizès, in the Gironde department. It is owned by Christelle and Laurent, who represent the sixth generation of the family at the helm of the property. Their daughters, Charlotte and Anne, are also involved in running the estate.
History and philosophy
Château Chillac boasts a long history, with the family rooted in this terroir since the 19th century. The château itself dates back to the 13th century. In 2013, the estate acquired Château Quillet. The winegrowing philosophy is firmly focused on respect for nature, organic farming, and biodynamics. This approach aims to foster biodiversity and sustainably manage humus, water, and organic matter. The estate is also affiliated with Bordeaux Pirate.

Château Chillac produces wines under several appellations, notably AOP Bordeaux for cuvées such as Château Chillac Bordeaux 2014, L’Originel 100% Malbec, and Château Quillet. Some wines are also classified as Vin de France, including the Vin Orange.

The vineyard (terroir)
The Château Chillac vineyard spans 55 hectares. The soils are varied, featuring clay-limestone, sandy parcels, and occasionally stony areas. The terroir of Château Chillac Bordeaux 2014 is notably clay-limestone. That of L’Originel 100% Malbec is sandy-clay, while Vin Orange comes from clay soils. Château Quillet boasts a terroir composed of clay, sand, limestone, and red gravel. The cultivated grape varieties include Merlot, Cabernet Sauvignon, Malbec, Cabernet Franc, and Sauvignon Gris. In addition to the vines, 35 hectares are dedicated to cereal crops alongside several woodland plots. The vineyard is certified in Organic and Biodynamic Agriculture.
Flagship cuvées
The estate offers a diverse range of cuvées. Château Chillac Bordeaux 2014 is crafted from a blend of 60% Merlot, 20% Cabernet Sauvignon, and 20% Malbec. It reveals notes of lightly spiced red berries, blackcurrant, and blackberry. L’Originel Bordeaux 2023 is a cuvée made with no added sulfites. L'Originel 100% Malbec is a single-varietal wine which, for the 2020 vintage, is certified organic and biodynamic. Château Quillet 2021 is an organic wine crafted from a blend of 40% Merlot, 40% Cabernet Sauvignon, and 20% Cabernet Franc. Lastly, Vin Orange 2022 is a Vin de France produced from Sauvignon Gris.
Vinification and ageing
Winemaking practices at Château Chillac combine traditional expertise with modern equipment, including temperature-controlled concrete and stainless-steel vats, as well as a ground-coupled heat exchanger (Canadian well). The estate favours vinification without added sulphur. Minimal sulphur is added, if necessary, prior to bottling, depending on destination markets.
