History and philosophy
The estate has been dedicated to the production of Bordeaux wines since 1958, with traditional winemaking starting in 1965. Marie-Hélène and Stéphane Chagnaud acquired the property in 1997. In 2020, the estate began its conversion to organic farming. Vineyard management practices aim to encourage the balance of vine and soil, notably through grass cover between vine rows to create gentle competition between grasses and vines, winter pruning using the double Guyot method, and shredding vine shoots directly in the vineyard. Manual work in spring—such as shoot bending, debudding, suckering, and trellising—is carried out, along with leaf thinning as the grapes approach maturity to aerate the bunches.

Winemaking and ageing
For the red wines of the Bordeaux appellation, vinification takes place in stainless steel vats with temperature control and a short maceration of around 15 days. For the red Bordeaux Supérieur, maceration is longer, lasting three to four weeks. Ageing for the red wines is carried out in oak barrels for a period of 12 to 18 months. The rosé is crafted using the saignée method, where the juice macerates for a few hours after vatting, is drawn off, chilled, and then vinified in vats. The dry white is settled (débourbage) at low temperatures in stainless steel vats and vinified in vats. For the sweet wine, grapes hand-picked after botrytis-induced overripening are pressed, cold-settled, and vinified in vats. The crémant brut is crafted from hand-harvested grapes. The fermented juice is then entrusted to a specialist in Montagne Saint Emilion for the secondary fermentation (prise de mousse), disgorgement, and the addition of dosage liqueur.

The soils consist of small clay-limestone hillsides. Planting density is 4,000 vines per hectare, with a canopy height of around 1.70 metres. The average age of the vines is 30 years. The grape varieties comprise 70% Merlot, 15% Cabernet Franc, and 15% Cabernet Sauvignon. Harvesting has been mechanised since 1992, with the exception of young vines and the white grapes destined for sweet wines and crémants, which are harvested by hand. The harvest of white grapes for crémants begins in late August. Harvesting for dry whites takes place between late August and early September. The red grape harvest starts in the second half of September, while the sweet white harvest takes place later and is entirely manual following overripening from botrytis.
