Vinification and ageing

De la recette à la bouteille : un gin 100 % blayais - Sud Ouest
Andrew Eakin et Naomi Murtagh, vignerons irlandais à la tête des châteaux Puynard de Berson (depuis 2016) et Magdeleine-Bouhou (depuis 2021) à Cars, ont développé un gin haut de gamme. Avec leur équipe, incluant Isabelle Bolatre (gérante), David Bortot (directeur technique) et Ludwig Vanneron (consultant), ils ont testé ce spiritueux pendant deux ans. La production a lieu à la distillerie Two Origins Distillery, située au château Magdeleine-Bouhou, et utilise un alambic allemand Arnold Holstein. L'alcool de base, d'origine française, est mélangé à du genévrier et environ 14 aromates, dont des agrumes (citrons, oranges, pamplemousses), de la cardamome, de la menthe et du basilic, certains ingrédients restant secrets. Chaque distillation de 130 litres permet de produire 180 bouteilles de gin. Actuellement, le produit est vendu exclusivement à La Cave de l’Estuaire à Blaye, en partenariat avec Sébastien Cazaux, mais des exportations sont prévues vers les États-Unis et l'Irlande. Le gin, nommé TOD Gin, connaît déjà un bon retour sur le marché local. De plus, Andrew Eakin a planté de l'orge à Berson en vue de produire un whisky 100% local d'ici trois ans.
