Winemaking and ageing
The vinification is traditional, incorporating cold maceration. It takes place in concrete and stainless steel vats. For certain cuvées, ageing is carried out in oak barrels for 14 months, with 80% new oak. Other cuvées are aged in stainless steel vats for 20 months. The estate uses sorting tables to select the grapes.
