History and philosophy

The history of Vignobles Nadau spans five generations, representing around 150 years of winegrowing heritage. The estate has developed an approach combining tradition and innovation in both its viticultural and winemaking practices. Vignobles Nadau is certified HVE niveau 3.

Winemaking and ageing

Red winemaking combines traditional methods with modern techniques. The Merlot and Cabernet Sauvignon grapes are vatted following destemming and crushing, then fermented at controlled temperatures between 25°C and 28°C, with two pump-overs daily. Maceration is followed by malolactic fermentation. The estate also employs thermovinification for specific grape parcels, notably high-yielding Merlot and Cabernet Sauvignon from late-ripening terroirs. This technique involves heating the grapes to 70°C, followed by maceration prior to cooling. The final red blend consists of approximately 60% traditional vinification and 40% thermovinification. Ageing for the red wines takes place in temperature-controlled stainless steel vats, with controlled micro-oxygenation. For white wines, harvesting takes place in the early morning. The grapes are pressed immediately and cooled to 10°C. After cold settling, the gross lees are filtered and reintroduced into the must. Alcoholic fermentation is then initiated with selected yeasts and proceeds slowly at low temperatures, followed by racking and filtration prior to bottling.

The vineyard (terroir)

The Vignobles Nadau vineyard covers an area of 70 hectares on clay-limestone soils. For parcel management, the estate maintains full grass cover between the rows, and the vines are pruned in Guyot simple. The red grape varieties are dominated by Merlot (60%), complemented by Cabernet Sauvignon (30%) and Cabernet Franc (10%). For white wines, Sémillon and Sauvignon are grown in equal proportions.

Flagship cuvées

Vignobles Nadau offers red and white wines. The estate’s labels include Château Gillet, Château Perron La Gourdine, Château Maucru, and Domaine de Maucru. Château de Jabastas has also been produced in the past, for example in 1999. A distinctive cuvée, L’Inédite du Château Gillet AOC Bordeaux Rouge, is crafted from 100% Merlot and stands out for its no-added-sulphite vinification, introduced in 2018. Meanwhile, Château Perron La Gourdine AOC Bordeaux Rouge is dedicated exclusively to export markets. The estate’s annual production reaches approximately 500,000 bottles, distributed across more than 25 countries.
