White Winemaking
Mechanical harvesting takes place in September. Following a 5 to 8-hour pre-fermentation skin contact for the Sauvignon Blanc, the grapes undergo sequential pressing. Settling is carried out after flotation, followed by low-temperature fermentation (16°C). Ageing takes place on the lees for approximately two weeks prior to sulphiting, fining, and cross-flow filtration.
Red Winemaking
Red winemaking involves plot selection on cool clay-limestone terroirs. The harvest takes place at peak ripeness, followed by rigorous destemming and sorting. A cold pre-fermentation maceration precedes temperature-controlled alcoholic fermentation. Maceration lasts approximately 10 days with lees stirring to enhance roundness and sweetness.
Rosé Winemaking
Mechanical harvesting for the rosé takes place in early September. Direct pressing in a pneumatic press is followed by cold settling. Fermentation is maintained between 16 and 18°C and lasts from 15 days to 3 weeks. The wines are then fined and cross-flow filtered.
