The white grape varieties are divided between 90% Sauvignon Blanc and 10% Sauvignon Gris. The vines are trained in the lyre system to optimise sun exposure. Harvesting is carried out by hand, with selective sorting of healthy berries.

Vinification and ageing
For the red cuvée, grapes are hand-harvested with selective sorting. 90% of the wine is aged in new barrels for around 12 months, followed by 6 months of refining in vats. Rackings are carried out every two months. Blending and bottling take place at the estate. For the white cuvée, following hand-harvesting and selective berry sorting, ageing takes place on fine lees in barrels with regular bâtonnage (lees stirring) for approximately 10 months. Blending, fining, filtration, and bottling are likewise carried out on-site.
