This initiative includes melliferous flower-rich fallow land and beehives near the vines.

Flagship cuvées
The estate offers a variety of cuvées. Château Palatin is crafted in the Saint-Émilion Grand Cru appellation. Terrasses de Palatin is a wine from the Saint-Émilion appellation. Under the Château Roquevieille label, two cuvées are produced in Castillon Côtes de Bordeaux: the Tradition cuvée and the Excellence cuvée. The estate also offers a rosé, Roquevieille Rosé, in the Bordeaux appellation, as well as a white wine, Roquevieille Blanc, in the Entre-Deux-Mers appellation. Lastly, the Roque Palatin cuvée is produced in Montagne Saint-Émilion.
Vinification and ageing
Vinification techniques combine traditional and modern methods, which may include extended macerations, punching down (pigeage) and rack-and-return (délestage). Integral vinification in barrels or whole-cluster fermentations are carried out for specific batches. Ageing lasts between 12 and 18 months in 225- to 500-litre barrels (new, one- or two-wine barrels) or small-capacity concrete vats.
