Vinification and ageing
Vinification at Château Plaisance begins with cold pre-fermentation maceration. Fermentation then takes place in temperature-controlled vats, with a total vatting time of around three weeks. Ageing is carried out in oak barrels, with a proportion of one-third new oak. The SBO oenology consultancy, based in Bourg-sur-Gironde, supports the estate in crafting its wines.
