It is always a debate knowing when to terminate cover crops so they do not compete with the vines, whilst providing maximum nitrogen and carbon to the soil

At Cazebonne, we decided to roll our cover crops two weeks ago, just as the faba beans were in flower.
I was discussing this over the weekend with Laurent Cassy, an outstanding organic winegrower in the Entre-deux-mers. He made a different technical choice and has still not rolled his cover crops. He believes it provides protection against frost and that the faba beans continue to fix nitrogen. As proof, this photo he sent me clearly shows the nodules on the roots.
What do you think? At what date do you terminate your vineyard cover crops?
