We are grubbing up an old Cabernet Sauvignon parcel with 30% missing vines

Beyond a certain threshold, it becomes too costly to maintain a plot, hence the difficult decision to grub it up. We will let the land rest for a few years, which will give us time to reflect on which grape variety we will plant here.
