Vinification and ageing
Vinification at Château Mazeyres begins with hand-harvesting, followed by three sorting stages: first in the vineyard, then two in the vat room. The grapes are fully destemmed. Fermentation is conducted gently, with manual pump-overs and punch-downs, in temperature-controlled stainless steel vats ranging in capacity from 22 to 120 hectolitres.
Ageing lasts for 14 months, carried out in oak barrels (approximately 25% new) and 7-hectolitre concrete eggs. Thomas Duclos acts as consultant oenologist.
