Ageing for the red Château Méjean lasts between 12 and 18 months on fine lees. The blend matures in 40% new 500-litre foudres, 40% one-wine oak barrels, and 20% stainless steel vats. The coopers selected include Atelier Centre France, Stockinger, ERMITAGE, and DAMY.

The Peytar cuvée, a pétillant naturel, undergoes natural fermentation without additives, followed by ageing sur lattes. This sparkling wine is neither filtered nor disgorged, and contains no added sulphites.
