Oak barrel

The virtues of oak barrel ageing

The barrel, a centuries-old emblem of Bordeaux ageing, remains a central element in the quest for complexity and longevity for our wines. At Château Cazebonne, we approach its use with discernment and respect for the fruit. Far from being an artifice, it is a silent partner that contributes to the blossoming of our most promising nectars.

The use of barrels, most often made of French oak, is a rich tradition that dates back centuries. As Jean-Baptiste Duquesne points out in "Bordeaux, une histoire de cépages", the impact of wood on wine has always fascinated winemakers. Oak, with its microscopic porosity, allows for a slow and subtle micro-oxygenation. It is a gentle respiratory exchange that refines the tannins, making them more supple and silky, whilst stabilising the colour of the wine.

Beyond this structural maturation, the wood also provides complex aromatic components, derived from its composition. One can find notes of vanilla, spice (clove, cinnamon, pepper), toast, or even coffee and liquorice, which blend harmoniously with the grape's original bouquet. The integration of these aromas is a delicate dance: it is a matter of not "oaking" the wine, but enriching it, giving it an extra dimension without ever masking the pure expression of the Cazebonne terroir.

The different origins of oak

The oaks used for cooperage come mainly from European forests, with a predominance of French oak (Quercus robur and Quercus sessiliflora) and American oak (Quercus alba). Each of these origins confers distinct properties on the wine. French oak, often sourced from the forests of Limousin, Allier, Vosges or Tronçais, is renowned for its finesse, elegant tannins and delicate aromas of vanilla, flowers and sweet spices. Its toasting is progressive and long. American oak, richer in lactones, brings more pronounced notes of coconut, strong spices and coffee, often with more powerful tannins. The choice of origin is crucial and is adapted to the typicity of the grape variety and the desired style of wine.

New barrels or older barrels?

At Château Cazebonne, we select our barrels with great precision. We favour a moderate percentage of new wood, as an excess could dominate the delicate fruit of our grape varieties. New barrels, with their more pronounced aromatic and tannic impact, bring immediate complexity and actively participate in building the wine's structure. They are used for wines with a high ageing potential and an ability to integrate these oaky contributions without fading away. Barrels that have already housed one or more wines, known as "older barrels" or "used barrels", have a less intense effect. Their main contribution is then micro-oxygenation, allowing the tannins to soften and the aromas to develop without overloading the wine. This type of ageing is ideal for preserving the freshness and aromatic purity of certain grape varieties.

The coopers of Cazebonne

The choice of cooper is essential for the crafting of our wines. We collaborate with coopers who share our philosophy of respecting the terroir. They advise on the origin of the oak, the type of grain, and the degree of toast of the barrels. Toasting, a stage in the manufacturing process, allows the aromas of the wood to develop and its tannins to soften. Its intensity is chosen according to the characteristics desired for the wine. In particular, we work with Stockinger and Sylvain. This collaboration ensures that each barrel contributes to the identity of our cuvées, complementing our work in the vines and the cellar.

Cazebonne's oak-aged cuvées

Only wines presenting a proven ageing potential and a tannic structure sufficient to "face" the wood are aged in barrels, thus guaranteeing a perfect balance and a harmony of flavours. This ageing particularly concerns our most emblematic red wines, which benefit from this maturation to refine their profiles. Ageing in eggs or oak barrels contributes to the complexity of the Grands Vins de Graves produced at Cazebonne, where fruit aromas marry with wood notes to create a rich and deep aromatic palette. It is this constant search for harmony that guides our ageing choices, in order to reveal the very best of our terroir.

Conclusion on Cazebonne

This meticulous barrel ageing is one of the expressions of our ambition at Château Cazebonne: that of restoring the richness of the Bordeaux vineyard by replanting forgotten grape varieties. This pioneering work is made possible thanks to the unwavering support of the many wine lovers who have adopted our wines and share our vision.
