Blending

Wine blending: the art of creating flavour harmony

What is wine blending?

Wine blending (assemblage) is an oenological practice that consists of marrying different wines, whether from various grape varieties, distinct plots, different vintages (in certain appellations), or diversified ageing vessels (vats, oak barrels, amphorae). Far more than a simple addition, it is a truly creative process aimed at achieving a final wine whose quality and complexity surpass those of its individual components. As Jean-Baptiste Duquesne explains in his book, blending is "inseparable from the expression of Bordeaux terroir", allowing the best of each element to be revealed for overall harmony.

The oenological objectives of blending

The motivations behind blending are multifaceted. Above all, it aims to achieve perfect balance on the palate by playing on aromas, textures, acidity, and tannins. Blending also imparts greater aromatic complexity to the wine by combining the complementary flavour profiles of different grape varieties. It is also a way to guarantee a certain stylistic consistency from one vintage to the next by smoothing out climatic variations, or to enhance a cuvée's ageing potential. For example, Cabernet Sauvignon brings structure and ageing potential, while Merlot offers roundness and immediate fruitiness.

When and how does blending take place?

The blending process generally takes place after the various fermentations (alcoholic fermentation and malolactic fermentation) and the ageing (élevage) of the wines. It is a delicate stage that requires an in-depth understanding of the wines and great sensitivity. Oenologists conduct multiple comparative tastings, testing different proportions and combinations. This precise work can be adjusted throughout the ageing process, with regular reassessments to ensure the wine's desired evolution. The timing is crucial, as blending effectively "fixes" the cuvée's final profile.

Blending at Château Cazebonne

At Château Cazebonne, blending is a cornerstone of our philosophy. We see it as a unique opportunity to elevate the specific characteristics of our grape varieties and terroirs. Whether it is the power of Cabernet Sauvignon, the roundness of Merlot, the complexity of Carmenère, or the singularity of Castets, each wine resulting from a specific ageing method – in oak barrels, amphorae, or concrete eggs – is considered for its potential contribution. This collaborative work with our oenologists offers the opportunity to create wines that best express the identity of our vineyard: balanced, harmonious wines capable of standing the test of time.

We take pride in this exacting approach, which drives us to practice field blending (complantation) in the vineyard in Bordeaux with grape varieties that had once disappeared, thereby contributing to the richness and diversity of the Bordeaux vineyard. This pioneering work is made possible thanks to the unwavering support of the many wine lovers who have embraced our wines and share our vision. To learn more about the fascinating history of the grape varieties that shaped our region, we invite you to receive the digital edition of the book "Bordeaux, une histoire de cépages".
