After 'Jamais seul', I have just tackled Marc-André Selosse's latest book, 'Les goûts et les couleurs du monde'

This time, the author reveals the role of tannins in the living world.
Did you know that certain plants can increase the proportion of tannins in their leaves, to the point of making them indigestible (or even lethal) for their herbivore predators?
That the term tanning (leather) comes from tannins because they are used for their ability to bind to skin proteins and thus prepare the leather, softening it and making it durable?
That tannins carry aromas owing to their molecular structure (a benzene derivative)...
In short, a book that makes us a little wiser and which comes highly recommended, whether you are a wine enthusiast or not.
