Marion is racking off a vat of Semillon that has now completely finished its fermentations

We lowered the vat temperature to 10 degrees last week, which allowed the tartrates to crystallise and the lees to settle at the bottom. The clear wine was isolated in a vat where it will spend the winter. The lees are kept in a floating-lid tank. We shall see whether we filter them, before a potential blending.
