This wine is iconic in the young history of Cazebonne

It is the first white wine we vinified in a vintage (2017) that did not spare us from frost.
This wine is an accident along the way. We had not yet acquired a wine press and had to wait for a neighbour to lend us one once their harvest was completed.
The Sémillons, but especially the Sauvignons, were ripe—very ripe—when we harvested them.
After barrel ageing, we submitted this wine to the body responsible for official approval.
The verdict came back a few days later: the wine was rejected. It did not meet the expected standards for the appellation.
It was deemed: 'putrid, stagnant, reduced…'
This wine sold out in just a few weeks to bistronomic restaurants, captivated by the atypical character (ripe, unfiltered, unfined…) of this terroir wine.
This lesson was crucial to the DNA of Cazebonne wines: dare, think outside the box, and offer wines we truly love without compromise.
We tasted the wine again last week, and it amazed us with its tension and its long finish on fine bitters.
