We start harvesting our Bouché plot this Saturday

Compared to last year, for the same pH, alcohol levels are lower.
The real challenge is harvesting ripe grapes with a perfect balance.
We will almost certainly follow on Monday and Tuesday with our plots in Peyron (sauvignon) and Cazebonne (sémillon and sauvignon).
That will leave us with Médecine and Peyrous to bring in.
Nitrogen levels are very good, allowing us to ferment these wines with indigenous yeasts with complete peace of mind.
Everything will move very quickly for the whites this year. We are about ten days ahead compared to last year.
PS: Sampling carried out on Wednesday morning, which leaves three additional days of ripening with these warm days and cool nights.
PS2: Reading the chart:
Line 1: density
Line 3: total acidity
Line 4: pH
Line 5: malic acid
Lines 6-7-8: estimated alcohol
Line 9: nitrogen
