The Vineyard (Terroir)

The Château Valguy vineyard covers an area of 8 hectares, planted on soils composed of pebbles and gravel. The vines sit at an altitude of 50 metres, notably within the commune of Fargues de Langon. The average age of the vines is around fifty years. The grape variety proportions for Sauternes consist of 85% Sémillon, 10% Sauvignon, and 5% Muscadelle. Viticultural practices include pruning, soil conditioning, trellising height management, and manual de-leafing. Harvesting is carried out by hand in successive passes (tries successives) to selectively pick botrytised, candied grapes.

Vinification and Ageing

For Sauternes, grapes are harvested by hand in successive passes. The vinification process involves cold settling (débourbage) at 5°C and slow, temperature-controlled fermentation. Fermentation is arrested using chilling followed by the addition of SO2. Château Loubrie Sauternes is aged in oak barrels for 24 months.

For Caillou de Valguy Blanc, grapes are harvested by hand and fermented in oak barrels. Ageing takes place for 10 months in oak barrels (25% new) on the lees with regular stirring (bâtonnage).

Caillou de Valguy Rouge is vinified with hand-destemmed, foot-trodden grapes. It is aged for 22 months in oak barrels (25% new oak) and bottled without fining or filtration.

Château Valguy (Sauternes) is aged for 18 months in oak barrels, one-third of which are new.
