A truly wonderful visit to Climens the day before yesterday, at the invitation of Jérôme Moitry.

Jérôme, like me, is a neo-vigneron. And like all newcomers, he asks many questions.
No subject is off-limits.
We had an extended discussion with his director, Frédéric, about Climens' strategy concerning their dry wines. Jérôme aims to craft one of Bordeaux's greatest dry white wines and showcase the full potential of this magnificent grape variety, Sémillon.
The wine globe is highly praised here for the work it allows in lees ageing, with Sémillons harvested at optimum ripeness.
The tasting continued in the cellars with a sampling of some micro-vinification trials (macerations, co-fermentation, work with Sauvignon Gris).
We will undoubtedly speak of Climens again in the coming years. This work of questioning and research will bear fruit.
And I very much look forward to inviting them back to Cazebonne to show them what we've been investigating on our side this year.
