We deliberately let these Sémillons ripen for an extra week for a final harvest of two 500-litre barrels. This batch will certainly come in very handy for our final blends of the grand vin blanc. Unless we decide to make a separate cuvée out of it. You never know… We have now almost finished the whites (leaving just two late-ripening experimental grape varieties: Blanc vert and Blanc Auba). Now onto the reds: on Thursday, we started harvesting a small parcel of young Merlot vines that had suffered, where we had nothing to gain by waiting.
