And they are nicely ripe. No more green bell pepper notes, making way for the complexity of Cabernet. It is going to be all hands on deck over the coming days. Botrytis is developing rapidly, and we will need to bring everything in very quickly. We harvested the most advanced parcels yesterday, and we are doing the rounds this morning to see if we can wait until Tuesday or Wednesday for what is left. Not so sure.
