The whites are quietly fermenting in barrels and amphorae, batch by batch, terroir by terroir

At Cazebonne, we are committed to postponing blending as late as possible, to preserve as much singularity in each batch as possible. This allows us to retain a palette of nuances that will prove invaluable in the final blends. The most neutral batches will be used for crafting Cuvée Entre amis (not sure there will be many this year). The most interesting will be offered as single-vineyard wines (from a single terroir) or in the blend of the Grand Vin.
Note that for the maceration wine, we are returning to the blend that captivated us so much in the 2019 vintage: 80% destemmed Semillon from our Médecine plots with 20% very ripe, whole-bunch Sauvignon gris.
Fermentation of these two grape varieties takes place in amphorae in contact with the skins.
Two later-ripening plots remain to be harvested in the middle of this week, along with a few crates of forgotten grape varieties among those we are experimenting with.
2023 is shaping up to be an excellent year for whites.
