Things are moving fast, very fast
Potential alcohol has gained a degree in just a few days. Acidity levels were still high last week and have dropped quickly.
The first column corresponds to the analysis of a Sauvignon plot, the other two to Sémillon with one particularly high-quality croupe. Potential alcohol is there, it is ripe, and the pH levels are sound.
So, we are harvesting these plots tomorrow morning without delay.
