Two weeks ago, we thought we might have harvested the blanc auba too early

So we left two vines to see how it develops. Indeed, the grape variety lives up to its reputation, just as described in 19th-century literature. With little susceptibility to rot, it was traditionally harvested very late and took on a lovely russet colour. We still need to run analyses during the week to see how it fares in terms of sugar and acidity. And push its ripeness even further.
