We are pumping over juice on the first vat of Merlot we have just harvested, in order to homogenise the crop and thoroughly wet all the grapes

Tomorrow, we will accelerate fermentation by adding a few hundred litres of our pied de cuve, which has already started fermenting. This Merlot harvest is very fine, very sweet (we are awaiting the analysis, but around 14% potential alcohol), lacking a little freshness to our taste. However, it should allow us to produce something interesting in the blend.
