Yeasts need nitrogen and oxygen to do their work
Pump-overs thus provide oxygen for their proper development.
This also allows the cap to be wetted and prevents undesirable bacteria from developing there.
We carry out two pump-overs a day as fermentation is now well underway in the first Merlot vat. During this pump-over, the juice is thoroughly aerated, as shown in the photo.
