Seafood, delicate treasures of the ocean, calls for wines capable of enhancing its briny flavours without overpowering them. At Château Cazebonne, we craft dry white Graves wines that stand as ideal partners for your platters of oysters, crustaceans, and shellfish. Our unique terroir, combined with our organic and biodynamic practices, gives rise to cuvées of remarkable freshness and minerality, in perfect harmony with seafood dishes.
The freshness and crispness of our white wines are driven by Sauvignon Blanc. The cornerstone of our blends, it delivers vibrant citrus notes—grapefruit, lemon—and a razor-sharp acidity that awakens the palate. This lively character provides an ideal counterpoint to the iodine profile of oysters and the delicate flesh of prawns or langoustines, creating a remarkably refined flavour balance. Our gravelly soils, which gave the appellation its name, lend a distinctive mineral backbone to our wines, at times subtly saline, reminiscent of ocean spray.
Sémillon, another pillar of our cuvées, contributes a touch of roundness and complexity without ever weighing down the aromatic profile. This balance pairs beautifully with richer shellfish such as lobster or spiny lobster, as well as the gentle sweetness of pan-seared scallops. Our cuvée "Le Blanc de Cazebonne" is a fine illustration of this harmony, notably awarded its first star in the prestigious Guide des Meilleurs Vins de France (RVF).
For convivial gatherings and celebratory apéritifs, our Pet'Nat' "Gaz'bonne" offers a refreshing alternative. Its fine bubbles and vibrant fruit make it an original and invigorating companion for prawns or whelks. Choosing a white wine from Cazebonne for your seafood pairings means opting for elegance, recognised quality, and the authenticity of an organic and biodynamic Graves wine. It also means supporting a pioneering viticultural project: the revival of historic Bordeaux white grape varieties. Furthermore, for a wine for a business meal in Bordeaux, Cazebonne is a reliable and distinctive choice.
Pairing white Graves wines with seafood is a gastronomic experience where each element elevates the other. The salinity of oysters, the delicacy of prawns, or the richness of lobster resonate with the minerality and crispness of our wines, creating a harmonious dialogue. It is the ideal occasion to celebrate the sea and the Bordeaux terroir, whether for a summer lunch on the terrace or a celebratory meal among friends.
Cazebonne white wines stand out through an aromatic profile that complements the nuances of seafood effortlessly. Sauvignon, prominent in our blends, reveals bright citrus notes (lime, grapefruit) and herbal nuances that refresh the palate and cleanse the mouth after each briny mouthful. Added to this is the roundness and complexity lent by Sémillon, which softens any potential sharpness from the Sauvignon and delivers a more enveloping texture—ideal for richer crustaceans or firm-fleshed fish. Finally, the minerality, the signature of our Graves terroirs, adds an extra, often saline dimension that prolongs the marine flavours on the finish.
At Château Cazebonne, several of our white wines are natural partners for seafood:
To fully appreciate the freshness and delicate aromas of our white wines alongside seafood, serving temperature is paramount. Ideally, serve our white Graves between 8°C and 10°C. Too cold, and the aromas will be muted; too warm, and the alcohol will become prominent, weighing down the wine. Decanting is generally unnecessary for our youthful white wines, as their aromatic profile is already very expressive. However, for older or more complex cuvées, a 30-minute decant can help reveal additional aromatic nuances.
While the freshness of Graves is a dependable benchmark, other white wines offer engaging pairings. A Muscadet Sèvre et Maine sur lie, with its brisk acidity and marine minerality, is a timeless classic with oysters. White Côtes de Gascogne (Sauvignon-Colombard) also offers a fruity, thirst-quenching alternative. For seafood prepared in a creamy sauce, an oaked yet balanced white Burgundy or a more textured Sancerre could be considered.
Although less conventional, a fresh Bordeaux wine, such as a dry, fruity rosé, can accompany seafood salads or grilled dishes. Some enthusiasts even venture to pair very light, low-tannin reds with darker grilled fish; however, this requires careful selection so as not to overwhelm delicate marine flavours. Wondering which wine to choose for a summer barbecue? We also have a few gems for you to discover.
For a truly successful food and wine pairing, the provenance and freshness of your seafood are essential. Always favour seasonal produce sourced from sustainable fisheries and, wherever possible, short supply chains. Exceptional seafood will show the quality of our Graves wines at their very best. Do not hesitate to consult your fishmonger for the freshest catch, and dare to try unexpected pairings, such as griddled razor clams with our Blanc de Cazebonne.
At Château Cazebonne, we are committed to reviving the forgotten grape varieties of our Bordeaux heritage—a labour of passion made possible by the enthusiasm and support of wine lovers who, like you, have embraced our wines.
