I want itWine for grilled fish
Simply grilled fish—whether crisped over barbecue flames, seared on a plancha, or roasted to perfection in the oven—is an invitation to freshness and simplicity. This delicate dish, both wholesome and flavourful, calls for a food and wine pairing that enhances its finesse without ever overpowering it. The goal is to find a partner that brings vitality and balance, elevating the delicate texture of the flesh and its subtle saline nuances.
Traditionally, dry white wines—benchmarks of Bordeaux appellations such as Graves—are ideal companions. Their aromatic profiles and vibrant minerality answer marine flavours with great elegance. This is exemplified by our cuvées from Château Cazebonne, whose quality and unvarnished expression of terroir have earned a star in the Guide des Meilleurs Vins de France (RVF).
Crafted in accordance with Organic and Biodynamic principles, our wines deliver a purity and energy that pair effortlessly with the simplicity and freshness of grilled fish. At Château Cazebonne, we venture off the beaten track. True to our commitment to reviving Bordeaux’s viticultural heritage, we are replanting forgotten, heritage grape varieties such as Blanc Verdet and Sauvignonasse, which will soon reclaim their place and express their individuality in our future cuvées. This pioneering work—the fruit of extensive research into the history of Bordeaux grape varieties (detailed in the book Bordeaux, une histoire de cépages by our co-founder Jean-Baptiste Duquesne)—is made possible by the enthusiasm and steadfast support of a passionate community of wine lovers. Thanks to you, we can explore these new pairing possibilities and offer wines of rare authenticity. Explore our full range of wines on the Cazebonne online shop. The perfect pairing between wine and grilled fish relies on achieving a delicate balance. The flesh of the fish, whether delicate or rich, requires a wine capable of complementing it without dominating. Notes of citrus, orchard fruit, mineral nuances, and a refreshing acidity are always welcome. These attributes cleanse the palate and deliver a brisk vitality that answers the fish’s saline flavours. For richer fish, subtle structure and aromatic complexity can create a striking, memorable match. Consider wine pairings for a barbecue in the vineyards more broadly, which raise similar questions around grilled, charred flavours.
At Château Cazebonne, our range offers several options to elevate your grilled fish dishes. Our Graves Blanc, crafted from a blend of Sauvignon Blanc and Sémillon, is a reliable choice for its vivacity and minerality. Sauvignon Blanc brings citrus notes and vibrant tension, while Sémillon provides textural roundness. For a bolder experience, our orange wine—produced through prolonged skin contact—will surprise you with its complexity and ability to partner with oily or spiced fish, offering gentle tannic grip and intense aromas.
Serving temperature is crucial to fully appreciating a wine paired with grilled fish. A dry white wine such as our Graves Blanc is best served chilled, between 8°C and 10°C, to preserve its freshness and lift. Decanting is generally unnecessary for our youthful dry whites, but may be considered for more complex cuvées to allow their aromas to open up. For an orange wine, a slightly higher temperature—around 12°C—will better reveal its aromatic complexity. Do not overlook white wines in general across your seasonal meals.
Beyond traditional pairings, other options can beautifully complement grilled fish. A Pét-Nat, such as our Gaz'bonne, adds a touch of festivity and lightness with its refreshing bubbles and fruit-forward profile. For fish with more pronounced flavour or dishes prepared with robust aromatic herbs, one might even consider a very light, low-tannin red wine served chilled—such as a single-varietal light Gamay or fresh Pinot Noir. However, exercise caution with red wines so as not to overpower the fish's natural delicacy.
Château Cazebonne’s tip for an impeccable food and wine pairing with grilled fish lies in the preparation itself. Simple cooking—using a drizzle of quality olive oil, sea salt, freshly cracked black pepper, and fresh herbs (thyme, rosemary, parsley)—allows the fish to express its delicate flavours and harmonise seamlessly with a mineral-driven, fruit-forward wine. Avoid overly rich or heavily spiced sauces that could drown out the dialogue between dish and wine.
