Saint-Macaire was once a maligned grape variety

Truth be told, winegrowers tended to push its yields a little too far.
It must be said that it easily produces many fine bunches.
Here we can see that its bud produces three shoots, each capable of carrying two or three bunches.
With pruning to 8 buds, if we have three shoots with three bunches each, that would make 72 bunches on the vine. Far more than this vine can ripen.
We will have to go through and shoot-thin to settle for around fifteen bunches.
It is only at this cost that Saint-Macaire can offer us wonderful surprises.
